You do not have to buy vegetable concentrates, but you can prepare them yourself at home and make them healthy and with fresh ingredients. It is known that the ones you buy in the supermarket are full of preservatives, so try to replace them with homemade ones. The recipe is brought by Sosela Ndina, who always prepares them herself and always has them ready almost every time she cooks.
For about 15 square feet of vegetables, use 500 g of mixed vegetables, 1 tablespoon of olive oil and 150 g of salt. 1 square is enough for 1 liter or 1.5 l of water. Optionally, you can add vegetables or other spices.
Ingredients:
â?¢ 2 carrots
â?¢ 2 small squash
â?¢ 2 jump celery
â?¢ 1 onion
â?¢ 1 small potato
Method of preparation:
After washing the vegetables well, cut them into small pieces and put them all together in a pan. Add 1 tablespoon of olive oil and simmer for 10 minutes, stirring with a wooden spoon. Add 150 gr of salt and cook for another 10 minutes. Then pass them all in the mixer until a thick and creamy cream is formed. Return to the pan for a few minutes, until the mass is no longer liquid. Next, toss the mixture on a baking sheet and give it a rectangular shape. Once warm, wrap in paper and refrigerate overnight. The next day cut them into squares and place in a plastic bowl, separating each square with a baking sheet cut slightly larger than their size. Keep in the freezer and whenever you want to use them for soup, dish, risotto, etc. you have them ready.
