According to a recent study in Britain, specialists have concluded that the reason why bread should not be stored in the refrigerator is hidden in the starch used for its cooking, which varies according to temperatures. Storing bread in the refrigerator crystallizes the starch and after it drops to room temperature, it returns to its previous state. Bread starch changes combination and after heating, it is modified again making the bread even stronger. This process removes the taste of the bread and loses its freshness in a shorter time.
What should be done to preserve bread longer?
One of the study specialists, David Norman, advises that the best way to keep bread fresh is not to buy it sliced, as this way it dries more slowly. During the meal cut only a few slices, as much as you will consume, and leave the rest uncut. In case the amount of bread is large and you are going to store it in the fridge, the best way to stop the starch recrystallization process is to put it in an airtight container or bag.
