Rich in mineral salts, calcium, iron, phosphorus and vitamins A, C, B1 and B2, broccoli is an excellent vegetable for our health and this season we can benefit from many of its nutritional properties. It has many uses in the kitchen, but today we will prepare a creamy broccoli soup, a simple but really nutritious and healthy dish, very useful for our body.
Ingredients
700 gr broccoli bounce (set aside a few
500 ml vegetable broth
2 small onions
8 sprigs of parsley
1 bay leaf
4 tablespoons grated cheese
2 tablespoons olive oil
Salt and pepper
Preparation:
Chop the onions and toss in a saucepan: add the olive oil and two tablespoons of vegetable broth and mix over medium heat until flavored.
-Add the cleaned and diced broccoli skewers, add the rest of the broth and further add the parsley and bay leaf.
-When it gets boiling, lower the heat and let it simmer for 20 minutes.
-Then remove the bay leaf and parsley, fry the soup in the mixer and then put it back on the fire.
-Add the leftover broccoli pieces, boil the soup for another 10 minutes, arrange with salt and pepper and add the grated cheese. Serve the dish hot.
