Ashurja is a Turkish dessert that has been prepared for a long time by Albanian families and is now traded and bought with pleasure in confectioneries. However you can prepare it at home to get the pleasure of cooking, but also to have the guarantee of optimal taste.
This is the complete recipe of ashura.
Ingredients
For 4 people
300 gr wheat for ashura (beaten wheat)
100 gr of white sugar or coffee
100 gr arra
100 gr almonds
100gr hazelnuts
50 gr raisins
3-4 dried figs
3-4 karafila
Some pomegranate seeds for decoration (optional)
2 teaspoons cinnamon
2-3 tablespoons of starch (optional)
A little salt
Steps
1 Place the raisins in a bowl of warm water for 15 minutes to soften.
2. Wash the wheat well and simmer with about 2-2.5 l of water until completely softened.
3. Add sugar, a little salt, raisins squeezed from excess water, finely chopped raisins, cinnamon, cloves and grated walnuts, setting aside some for garnish.
4. At this point, we can let the ashura liquid thicken itself by increasing the cooking time and stirring it constantly, or add a little starch dissolved in warm water, to reduce the preparation time.
5. Let it simmer in this way for a few more minutes and spread the ashura in bowls, sprinkling it with a little cinnamon, some pomegranate seeds and the remaining nuts.
6. Put it in the fridge and consume it cold.
