Peach + tomato + basil salad
For 2: 2 peaches, 2 very ripe tomatoes, basil leaves, olive oil, salt, pepper. Cut into slices, drizzle with oil, salt/pepper, finish with fresh basil.
Blackberry smoothie
For 1: 1 frozen banana, 1 cup blueberries, 3 tablespoons natural yogurt. Blend in a blender, pour into a bowl, top with chia seeds and chopped almonds.
Watermelon–mint
For 4: 1?kg seedless watermelon, juice of 1 lemon, a handful of mint. Grind, place in a shallow pan, freeze; prick with a fork every 30 minutes until it becomes crystalline.
Roasted peaches with rosemary
For 2: 2 halved peaches, olive oil, rosemary leaves. Grill or pan-fry 2–3 min/side, sprinkle with fresh rosemary and a little lemon juice.
Yogurt with apricots and chia seeds
For 2: 200 g thick natural yogurt, 3 chopped apricots, 1 tablespoon chia seeds, a little cinnamon. Mix the yogurt with chia, leave for 5 minutes to thicken, add the apricots and cinnamon.
Watermelon-tomato gazpacho
For 3: 2 cups watermelon, 2 tomatoes, ½ cucumber, a little bell pepper, lime juice, salt. Grind everything cold, cool for another 30 min. Serve with olive oil and black pepper.
Sorbet with only fruit
For 4: 3 cups frozen fruit (strawberries, blueberries, peaches), juice of 1 orange. Blend until smooth. Serve immediately or freeze for 30 minutes for a firmer texture.
Melon carpaccio with mint
For 2: Very thin slices of melon, lemon juice, fresh mint, freshly ground black pepper. Arrange the slices, sprinkle with lemon, pepper and mint leaves.
Wholemeal toast with figs and ricotta
For 2: 2 slices of toasted wholemeal bread, 100 g ricotta, 2 ripe figs, a little pink pepper or fresh thyme. Spread the bread with ricotta, add the figs, sprinkle with spices.
“Freezer bark” yogurt with forest fruits
For 4: 300 g thick yogurt, 1 cup forest fruits, a little natural vanilla. Place the yogurt on a baking sheet with baking paper, spread the fruits, freeze for 2 hours, break into pieces.
Quick tips
Use super ripe fruit for natural sweetness.
Spices (cinnamon, vanilla, cardamom) and citrus (lemon/lime) enhance the flavor without the sugar.
